In addition to our premium bison individual products, we also offer whole, half and quarter bison sales. The price and weight will depend on the actual hanging weight of the animal and cuts desired by the customer. The hanging weight of an animal, about 60% of the live weight, is defined as the “usable” meat aka the steaks, roasts, ground meat and other popular products. Where as, the live weight includes products such as the hide, organs, bones. At the time of purchase we will provide a detailed “cut sheet” that will give customers the opportunity to specify specific cuts of meat desired and how they would like it packaged. If not, we can provide the information. Please review the information below for examples.
